Inspired by EllieBleu’s Pink Power Shake https://elliebleu.com/2017/01/23/pink-power-shake/ which looks absolutely delicious and being a bit sick of my ‘egg a day’ breakfasts in an attempt to avoid high carbohydrate cereals, I decided to make my own simple Diabetic Low Carb Variation. I’m continuing my quest to maintain my Diabetes Remission (and feeling a bit guilty about falling off the waggon with the Raspberry and White Chocolate Tray Bake last week… say no more!), I’m being ‘extra careful’ this week…
I was recently given a nutri blender by my mother in law – We call her ‘Gadget Nanna’ as she is a self confessed QVC addict. She literally has a house full of gadgets that are never used and eventually given away… I wonder if there’s a ‘support group’ set up for QVC Addicts… QVC Annonymous!!! 10 Steps to giving up QVC purchases programme….
However, on this occasion her purchase worked very well in my favour and is now being put to great use… Every cloud has a silver lining!
Making this ‘Pink Power Shake’ Diabetic Low Carb variation to Ellie’s recipe was really easy and tasted delicious. It was a very welcome change to ‘poached egg’ – which I do like but not EVERY day… You can get too much of a good thing and in my book VARIETY is definitely THE SPICE of life!
I left out a couple of Ellie’s suggested ingredients as they would increase the ‘carb’ level too much for my ‘low carb’ diet. Although raspberries and strawberries do contain fructose (natural sugar), they are amongst the ‘better fruits’ to eat as a Diabetic so I replaced Ellie’s banana (well not hers personally..haha) for the raspberries.. if you get my drift….
You will need a blender/liquidizer of some description and the Nutri Blenders (whatever make) do work really well for Fruit Smoothie drinks.
- Handful of strawberries
- Handful of raspberries
- A good dollop of Greek Yoghurt (is ‘dollop’ a measure.. probably not)
- half a cup of milk
- teaspoon of honey (optional and I didn’t include it.. )
- Take off the strawberry leaves then chop the strawberries and pop into the blender with all the other ingredients.
- Blend until smooth
- If you aren’t a fan of raspberry seeds, you may want to sieve it at this stage – I didn’t..
- Pour into a glass and simply….
Oh and maybe look out on the garden and notice the ‘little things’, contemplate the world passing by for a moment…….. and then before you finish.. notice that you’d really better make a start on some garden ‘tidy up’, unless you are much more ‘on top’ of the garden like Brigid from Watching The Daisies… https://watchingthedaisies.com/2017/01/26/52-weeks-of-thankfulness-week-31/
Future Variations I’m going to try:
- Adding a couple of fresh mint leaves
- Adding some blackberries
- Adding some avocado.. I think that will work brilliantly and I wish I’d thought of it earlier this morning as I’ve got some going ‘soft’ on the side.. Looks like it will be salmon and avocado salad for lunch!
